Ingredients:

Golonko - pork knuckle:

  • 6 corned pork knuckles
  • 30 dag sauerkraut
  • 10 dag porcini mushrooms
  • 10 dag onion
  • bay leaf
  • allspice
  • pepper
  • soup seasoning
  • salt

Śląski szałot - silesian vegetable salad:

  • 50 dkg ziemniaków
  • 20 dkg ogórków kiszonych
  • 10 dkg cebuli
  • 10 dkg boczku wędzonego
  • sól
  • pieprz
  • ocet
  • kminek
  • pietruszka zielona

 

Directions:

 

Golonko - pork knuckle

Blanch sauerkraut, add mushrooms fried with onion and season. Remove the bone from the pork knuckle, form a ‘pocket’ and fill it with the sauerkraut. Tie everything with a piece of string or put into butcher’s net. Boil with spices for about 1.5 hours.

Śląski szałot - silesian vegetable salad

Boil potatoes in jackets, add caraway. Chop smoked bacon and onion into small cubes and fry. Cut the boiled potatoes, pickled cucumbers (without peel) into cubes. Mix and add fried bacon with onion, season to taste with spices and chopped parsley. This type of Silesian salad can also be made with herring, sour apple and boiled carrot. Pork knuckle should be served with vegetable salad without herring.

 

 

This meal was prepared by the team of Two Killers (Qubus Hotel Katowice) during the 4th “Silesian Tastes Festival 2009” in Pszczyna. The Team won 1st place in professional category.
